They swim at depths of 1,200-3,000 ft and they use their fat to regulate their buoyancy at extreme depths. They boast one of the highest fat contents of all fish species and are almost impossible to overcook. Box contains 12 pieces of sablefish, individually vacuum-sealed into 5-7 ounces portions and carefully frozen with skin on and bones in to ensure a high-quality product.
